Beth's Oatmeal Chocolate Chip Cookies

Ingredients

½ cup unsalted butter, softened
¼ cup Applesauce
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 whole egg
2 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon cinnamon
½ teaspoon salt
½ teaspoon baking soda
1 ½ cups rolled oats, uncooked
1 cup semisweet chocolate chips

Preparation

Preheat the oven to 350°F (180°C).

In a bowl, combine the butter, applesauce, brown sugar, granulated sugar, egg, and vanilla. Mix thoroughly.

In a separate bowl, combine the flour, cinnamon, salt, and baking soda. Gradually mix the dry ingredients into the wet ingredients; add the oatmeal and chocolate chips. Stir well.

Drop spoonfuls of dough onto a greased cookie sheet. Bake for 10 - 15 minutes. Let cool before removing from the cookie sheet.
