Preparation
Cook the potato slices and garlic in water to cover until the potatoes are tender, about 10 minutes. Mash (peel and all) in a food mill, or use some other mashing tool. (The little bit of skin that goes through is not a problem.) Stir in the basil and buttermilk to a creamy consistency; season with salt and pepper. Refrigerate, if desired.
To serve, place in a glass dish; cover with plastic wrap and reheat in a microwave about 8 minutes on high. Stir once or twice while reheating. If the potatoes become too dry, stir in a little additional buttermilk.
